A handcrafted Japanese wooden barrel, made to carry fermentation culture into the future.We proudly partner with Kumpei, a Japanese artisan dedicated to crafting small wooden barrels for fermentation.
Each barrel is carefully handcrafted in Japan and can be used for miso, pickles and other traditional fermented foods. Over time, wooden barrels develop their own living microbial environment, adding depth, character and a quiet sense of place to the food made inside them.
In Japan, traditional wooden fermentation barrels have long supported the flavour and culture of miso, soy sauce, pickles and other fermented foods. Some large kioke barrels can be used for generations, becoming part of a living culinary heritage.
At FermenStation, we offer these barrels by special order to support the artisans keeping this tradition alive and to connect Japanese craftsmanship with people in Australia who value real fermentation.
